Whole Wood Pigeon

Wild wood pigeon is one of the greatest wild delicacies in the UK. The rich, red, full flavoured meat reflects the healthy, varied diet enjoyed by wild birds. Our whole wood pigeons come ready to cook.

Cooking instructions

Roasted

This technique works beautifully for whole birds. Preheat your oven to 180C/165C fan/350F/gas mark 4. Wash the pigeon inside and out and pat dry, then heat some olive or vegetable oil in a pan and fry the pigeon until lightly browned. Place on a hot, oiled roasting tin and cook, basting occasionally, for 10-12 minutes, or a couple of minutes more if you want it well done. Rest for 5 minutes before serving.
